3 ingredient pulled pork

I wasn’t planning on posting today but when I decided to make this dish today, I couldn’t resist! It’s so simple and so delicious and guess what?… healthy!! I know that pork isn’t the leanest of meats, but oh well, it’s gooood!

So I found this huge piece of meat for such a great price that I couldn’t leave the grocery store without it! I mean, look at it! I could feed a small army for  under $7!


All you need is a crockpot, an onion, an apple and a pork tenderloin. You can just season the pork with salt and pepper and let the flavor of the pork speak for itself or you can sprinkle on your favorite rub.  My amazing sister got me this awesome spice rub that’s sodium free so I decided to use it today 🙂

   
 
After I sprinkled on the magic 

   
And sliced my onion and apple (you can use any kind of onion, I just had red handy)

   
I throw it all in the crockpot and leave it on low for 8 hours. Simple as that!

 
 The not so simple part is leaving it in there for 8 hours… My house smells so good but there’s still 3 hours to go!!!….

(Fast forward 3 hours)

 Time to pull the pork! Look how it just falls apart 😋

  
 Using two forks or meat claws (as pictured) shred the meat and mix together with onion, apples and the yummy juice at the bottom.  

 You can add barbecue sauce at this point if you so desire but be careful of how much sugar may be in BBQ sauces. I served this with baked sweet potato and broccoli. Even my kiddos cleaned their plates!
