A healthy option for your Super Bowl party (Go Broncos!)

Although I stand firmly by my guacamole… it’s something that can be made for any occasion not just as a healthy super bowl snack.  I wanted to try something new and different for the big game tomorrow, so I found this recipe on Pinterest for Superfood Enchilada Dip http://fitfoodiefinds.com/2015/10/superfood-enchilada-dip/#_a5y_p=4519225

Let’s get started!  (But I’m going to do it my way😜)

  
*disclaimer- I am not saying that this recipe is my own. I am simply showing you how I made a recipe that I found on Pinterest and the changes I made to it.

After heating a tablespoon of olive oil in my cast iron skillet, I added ground elk, courtesy of my favorite father in law! You can use beef, turkey or you favorite ground game.

  
Once the meat is browned, transfer it to a plate and set aside.  If you’re using a fattier meat, drain the excess fat at this time.

  While the meat was browning, I diced 1/2 red onion, 1/2 sweet potato (because this sucker was huge!), several cloves of roasted garlic and 1/2 jalapeño which was left over from making my guacamole- not in the original recipe but why let it go to waste? I added another tablespoon of oil the the skillet then sautéed these veggies until the sweet potatoes where cooked through.

*in hind site, I should have diced the sweet potato the same size as everything else so that it would cook faster as well as making the dip more uniform… Oh, well. We’ll get em next time!

   
Once the potatoes are fork tender, mix in the browned meat, corn, black beans and enchilada sauce. I happened to have some home made enchilada sauce left over from last week. My wonderful husband got me Pioneer Woman’s cookbook for Christmas and this is the first recipe I made from it!  

 
If you don’t happen to have a jar of homemade sauce lying around, just grab one from the store 😉

  

Then I added some chopped cilantro

  
 
And put on a thin layer of cheese- remember, this is supposed to be healthy so have some self restraint!- and threw it under the broiler until the cheese was just right! 

  

  
 This was the first time that I made this recipe so of course I had to try it right away! I’m sure that tomorrow our friends won’t be too upset, and if they are, I’ll blame the missing scoop on the kids! The only thing that I haven’t done yet it add diced avocado on top but since I’m not serving it until tomorrow, that’s ok. (I had it with my guac, which was even better!) 

I hope that some of you try this and love it as much as I do! It can even be made as a quick and healthy chili- maybe add some extra liquid for that… Anyways! Happy Super Bowl weekend! Stay safe and GO BRONCOS!!!!!
