A Peach of a Slaw Recipe

Hey, there taco lovers!!!! It’s Tuesday again and I’ve come up with a sweet and tangy way to top off those tasty tacos!!

My signature taco is a fish taco with mango salsa. This began when we lived in Katy, TX and I could get my hands on the most fresh and delicious ingredients. All of our family members would ask me to make them every time they came to visit! If anyone reading this lives near an HEB, please feel free to overnight me a package  (or 6) of those handmade tortillas anytime !!!! It’s hard for me to make the same things the same way multiple times AND… I still have a ton of peaches to use up… So, instead of a mango salsa, this time I decide to make a peach slaw with a garlic cilantro lime dressing 🙂

Here’s what I used:

  • 1/4 head of red cabbage, thinly sliced
  • 1 shallot, minced
  • 1/2 red bell pepper, thinly sliced
  • 1 peach, thinly sliced
  • Half of a lime
  • 1/3 cup buttermilk (use unsweetened almond milk for paleo, clean eating)
  • 2 Tbsp apple cider vinegar
  • 1-2 Tbsp roasted garlic
  • 1/2 cup chopped cilantro
  • S&P
  • 1 tsp cholula (optional)

First, I thinly sliced the cabbage, red pepper and peach and minced the shallot. 

I tried to slice everything the same thickness to maintain consistency.

Next a squeezed a little of the lime over these ingredients and tossed them together in a bowl.


I set this aside while a started on the dressing. Using my food ninja, I pleaded together the rest of the ingredients. Simple as that!


And I wanted a little heat, to a put in some of my favorite condiment!

    Man, that smells good!! Now, I pour it over the veggies, toss and wait for dinner!

    Keep this covered in the refrigerator, tossing occasionally. Best if made a few hours before serving.

    I am going to serve this on top of blackened fish in a soft corn tortilla but it would also be great with pork! Let me know what you serve it with! Enjoy!
