6 Week Clean Eating Meal Prep Challenge- week 2: snack

Freezer Smoothie Packs

Smoothies (with or without protein powder) are some of my favorite snacks! It’s like having a milkshake in the middle of the afternoon and there are endless flavor combinations!  Having everything ready to just throw into the blender is key to prevent mindless snacking. All that you’ll need to add is the liquid.
What you’ll need: (to make 5 freezer packs)

  • 4 servings of Greek yogurt 
  •  Fresh baby spinach and kale- about 1/3 cup of each per pack
  • 1/2 banana per pack
  • 1 cup (per pack) fresh fruit
  • Optional- 1 Tbsp chia seeds
  • 1 cup liquid per pack- added at the time of blending (almond milk, coconut water, coconut milk, juice)
  • Optional- 1 scoop of your favorite protein powder

A few hours, or the night before, prepping freezer packs- put the yogurt into ice cube trays and place in the freezer.

If you don’t have ice cube trays, you can drop the yogurt by spoonfuls onto a cookie sheet lined with parchment paper and freeze.

I was pleasantly surprised that all four yogurt cups fit into just one tray!

Now that the yogurt it ready, we can start filling our packs. I use a quart size ziplock for mine.

Start with the greens, then throw in a few yogurt cubes and the half of banana (broken into pieces)

Then add the cup of fruit. As you can see, I used fresh mango, strawberries and blueberries this time because 1. I thought it sounded like a good combo and 2. It’s what was on sale at my grocery store! You can obviously use already frozen fruit and mix and match however you want 🙂

Sprinkle in the chia seeds if you’re using them

Seal the bags, pressing out all of the air, and place them in your freezer!

When you’re ready to have one, just put it in your blender (or ninja or bullet or whatever you have)

And enjoy!!! My kids beg me for smoothies all the time and it’s the perfect way to sneak in those veggies! When I have time, I used fresh juiced veggies for the liquid! You could always just grab some V-8, too 🙂
