Turkey Lettuce Cups
One of my favorite places to eat is PF Changs and one of my favorite things to eat there are the lettuce cups! It’s the only thing I would order for the longest time! Now I know how to make them at home, probably a good deal healthier, too..
This is a great recipe to make for a family dinner or as part of your weekly meal prep. You could have it for lunch all week long and it’s a great source of protein with less fat.
Here’s what you’ll need:
- 2 lbs lean ground turkey
- 2 tablespoons sesame oil
- 1 large shallot (or 1 small red onion
- 1 inch of fresh ginger root (peeled and finely diced or grated)
- 4 cloves garlic (minced)
- 1 bag shredded carrots
- 2 small cans sliced water chestnuts (drained and chopped)
- 1 cup chopped cilantro
- 1/3 cup hoisin sauce
- 1/4 cup low sodium soy sauce
- 2 tablespoons chili garlic sauce
- 1 head butter lettuce to serve in
Start by heating the sesame oil over medium heat and sautéing shallots and ginger. Sesame oil gets very hot very quickly and shallots can burn very quickly so pay close attention during this step.
Once the shallots and ginger are just right, add in the garlic, cook for one additional minute and add ground turkey. You can turn the heat up to medium high at this point.
Once the turkey is just cooked through (no more pink) toss on the carrots and water chestnuts. Not adding them until this step with keep them nice and crunchy, giving the filling great texture.
Once that is all stirred together and heated through. You can add the hoisin, soy and chili garlic sauce. Feel free to double the amount of chili garlic sauce if you like yours spicy! I would have but I have to share with two wimpy toddlers..😜! Mix that all in, let it simmer for about 5 minutes to thicken up, then toss in the cilantro.
Pile about 1/3 cup of the mixture into the middle of butter lettuce leaves and chow down!
