Shaved golden beet, carrot and radish salad.

This is the most beautiful thing that I think I’ve ever made! Such vibrant, gorgeous colors that completely translate into the flavor AND it’s ridiculously simple to make! This raw salad will refresh your tastebuds and impress the pants off anyone you make it for! 🙂

Here’s what you need:

  • 1 golden beet, trimmed and outer layer peeled
  • 2 medium carrots, peeled
  • 6 radishes, trimmed
  • 2 tbsp apple cider vinegar
  • 3 tbsp coconut oil (or EVOO)
  • 2 tsp Dijon mustard 
  • 1 tsp honey
  • S&P to taste 
  • Chopped fresh flat leaf parsley 
  • A vegetable peeler or mandolin

In a large bowl, using a peeler or mandolin, shave the beet, carrots and radishes. I had to use a vegetable peeler because I am traveling and forgot to pack my mandolin…😂 but I love the wide ribbons that it produced! I broke my carrots in half to keep them the same length as the beet shavings.


In a small bowl, whisk together the vinegar, oil, honey, mustard and S&P.

Pour over the veggies 

and toss to coat evenly


This is great by itself, as a side (I’ll be serving it with grilled chicken tonight) or over some greens with a side of cottage cheese! Let me know what you pair it with 🙂
