Summertime Succotash 

Whether you’re trying to clear out your fridge or intentionally go out and buy all of the ingredients for this yummy recipe, succotash is a super simple side dish that will go great with anything off the grill! During this time of year, I typically have most, if not all, of the ingredients needed to make a succotash from my weekly visits to the farmers market. And the best part is that you can throw in whatever sounds good to you! Mine turns out a little different every time I make it!

Succotash is a dish that is primarily made up of sweet corn and Lima beans. I don’t care for Lima beans, nor do I eat very many legumes most of the time, but fresh sweet corn does sneak back into my diet occasionally during the summer… It’s sooo good!!! Instead of Lima beans, I use zucchini and summer squash and red peppers.

Here’s what I used this time:

  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • 1 Patty Pan squash- it’s the yellow UFO looking one on the left, I discovered it at the farmers market and it delicious and stays firm when cooked!
  • 1 red bell pepper
  • a few (Anaheim?) peppers that looked good at the farmers market for a kick of heat
  • 2 ears of sweet corn
  • Handful of herbs from my garden (basil and oregano)
  • You’ll also need S&P and any other spices you feel like tossing in

The first thing that I did was throw the corn in the microwave. Yes, I said microwave!! Not something you’ll hear me say often, but my dad has been swearing by this method to cook corn for years and I was in a hurry so I decided to finally try it🙄 and it worked! All you do is throw the ears of corn, with husks still on, onto a plate in the microwave for 4 minutes per ear. That’s it! The corn is cooked perfectly and the silks just fall off!

While the corn is cooking chop and dice all of the other ingredients. 

    Heat a tablespoon of olive oil over medium high heat in a large skillet. Throw in the garlic and red onion first and when the onion starts to become translucent…

    Add in the peppers. And when those start to soften…

    Add in the squash. I forgot to mention, sprinkle a little salt and pepper with each addition of vegetables. 

    When the squash is almost cooked to to perfection, add in the corn (that you cut off of the cobs after microwaving) and herbs (plus any other spices you desire). After another minute or two of everything cooking together, it should be perfect!

    We had this with some grilled chicken, but it would also be great with brats, steaks, salmon… Anything off the grill! Let me know what you have it with!
