Holy Guacamole!
Guacamole is one of the easiest things to make and is one of the most requested snacks for me to make by family and friends. It’s difficult for me to provide a specific recipe, though. It all depends on how many people it is being made for and individual tastes (if you like more or less lime or cilantro flavor or how spicy you want it to be). I never measure, just eyeball and taste test until it’s just the way I want it 🙂
That being said, here’s the ingredient list for making a batch for a small group of people (or a Super Bowl party!!):
- 4 avocados
- 1/4-1/2 red onion
- 1 jalapeño
- 1 lime
- 1/2 cup chopped cilantro leaves
- Salt and pepper to taste
Cut all of your avocados in half lengthwise and remove the pits. I like to cut the “meat” into squares (like a grid) before scooping it into the bowl.
*try not to dive in yet! Yum!
This way you can make the guac as chunky or smooth as you like and the texture will be more consistent.
I used about 1/3 of a red onion for this amount of guac, but you can do more or less depending on your taste. In my experience, start with less and add more later if you think it’s necessary. There’s nothing worse than having a strong raw onion flavor in your mouth the rest of the day! Finely dice the onion, trying to keep the pieces the same size.
Now, the jalapeño! Depending on the size and heat of your pepper, finely dice 1/2 to the whole thing.
Cilantro! It seems like people either love it or hate it- but you must use SOME when making guacamole! Two of my own family members can’t stand it… If the see me put it in something, they won’t eat it! I’m still searching for proof of my adoption… Anyways! I used 1/2 cup cilantro leaves and roughly chopped them. (By the way, if you didn’t already know, separate the stems from the leaves and discard to avoid a bitter taste)
Now squeeze the lime on top- half at a time if you don’t want too strong of a lime flavor. You can always add more after the taste test.
Add a few shakes/turns/pinches of salt and pepper (keeping in mind you can add more in a minute) and with the back of a spoon, smash everything to your desired texture.
I prefer mine to be more on the chucky side 🙂

Add more salt, lime, onion… Whatever to make it just right! Hell, I’ve added and entire extra avocado at this point because I put in too much onion in the beginning!

If you happen to have any left over or if you make this ahead of time, push plastic wrap down onto the surface of the guac to keep air out so it doesn’t get all brown and icky and store in the refrigerator. Let me know how yours turns out!
