Overnight Oats

Talk about easy! Just throw a few things together in a mason jar, let it sit overnight and BAM! You have breakfast full of protein and energy for a few days!

I discovered over night oats and chia seed pudding last year and found several different ways to make them but this is my favorite way to get the perfect combination of the two! 

  Here is what you’ll need for this recipe:

  • 1 medium ripe banana
  • 1 1/4 cups vanilla almond milk, unsweetened
  • 1/2 cup vanilla Greek yogurt
  • 1 cup rolled oats
  • 1 Tbsp chia seeds

 

Oats, chia seeds and unsweetened almond milk are all that you need for your base. These three things alone are flavorless and boring so let’s add some flavor!  
 
I started by mashing up two small very ripe bananas (one medium banana will work but I only had the tiny ones, perfect for my toddlers) and some Greek yogurt. I usually go for vanilla yogurt for these oats but I only had strawberry this time. Good thing strawberry banana is one of my favorite flavor combos! I like to add yogurt 1. For the extra protein. 2. Because it makes it creamier and less likely for the chia seeds to clump together. If you’ve ever made chia seed pudding, you know what I’m talking about!

  
Once you have the banana, yogurt and almond milk mixed together, stir in your rolled oats and chia seeds and pour it all into a mason jar. Any cotainer with a lid would work, I just like using mason jars 🙂

  
Place the sealed jar in your fridge and let it sit overnight.

  
In the morning, your oats will look like this. This recipe makes quite a bit, usually lasts me 3-4 days, so dish out a serving for the next step. (Or you could pour the mixture into separate smaller jars the night before so it’s ready to go)

Now we personalize it! Add your favorite healthy toppings like slices of bananas or strawberries, whatever fresh fruit you have available, but butter, chopped nuts, a sprinkle of dried fruit (preferably unsweetened)…

 

I made my own almond butter the other day so I added a spoonful of it and some sliced banana on top. I wanted something a little sweeter today…  
 
So I threw on some craisins, too! So yummy and lots of different textures! Let me know what your favorite topping are!
