Smoked Salmon Deviled Eggs

I loved deviled eggs and I always like to make them at Easter, but I’m the only one in my house who will eat them… Until two years ago when I discovered smoked salmon deviled eggs! These are just as easy as regular deviled eggs and a great way to use up those hard boiled eggs that your kids insisted on dying but refuse to eat.. 

 What you need:

  • 6 hard boiled eggs
  • 1/4-1/3 cup mayo (you can substitute paleo mayo as well, I just didn’t have any on hand today)
  • 1 tsp mustard
  • 2oz. Smoked salmon
  • Salt and pepper
  • Paprika and capers and extra salmon for garnish

  
After you remove the shells, cut each egg in half length wise and remove the yolks, placing them in a mixing bowl. Arrange the egg whites on an egg platter if you have one, or any plate or platter will do. You may want to place them on a bed of lettuce leaves to keep them from sliding around though.

  
To the eggs yolks, add the mayo, mustard, salt and pepper and blend together with a hand mixer until light and fluffy. If the mixture seems dry, add another tablespoon of mayo. 

 
Now add the salmon and mix until evenly distributed  

 
My hubby just got a new smoker for his birthday last week and was already planning to load it up this weekend so I bought a side of salmon to sneak in there 🙂  look at that perfection! I could eat the whole thing right now!

 If you don’t have a smoker and/or the time to do it, store bought smoked salmon works just as well. It can be quite a bit stronger in flavor and sodium content though.

 
Spoon the mixture into a ziploc bag and cut the corner off one side. We’re going to pipe it back into the egg whites. 

  
This doesn’t have to be pretty, because we’re going to top it with a little more salmon and capers. 

 
Once all of the egg whites are filled, place a few flakes of salmon on top as well as a couple of capers. 

 
Refrigerate these bad boys until you’re ready to serve them. Sprinkle a dusting of paprika on top right before serving.
