Apple Breakfast Quinoa
In typical Colorado fashion, just as everything starts turning green, trees begin to bloom and we pull our shorts out of the back of the closet… It snows again. So I needed a warm, hearty breakfast to snuggle up to this morning!
This is so incredibly easy and makes about six servings so it’s a great recipe if you like to meal prep 🙂
- 1 cup quinoa
- 2 cups water
- 2 apples
- 1 tsp cinnamon
- 1 tsp vanilla extract
Pour quinoa and water into a rice cooker, if you don’t have one, you can use a sauce pan on the stove. Then, using a cheese grater, shred one of the apples and then dice up the other apple.
Add the apples, cinnamon and vanilla to the quinoa…
and start the rice cooker- that’s it! (If you’re cooking yours on the stove, just cook it like you normally would cook quinoa)
I topped mine with unsweetened vanilla almond milk, craisins and walnuts!
